If you do not give us any delivery date, your order will be shipped as soon as we have them in. The moisture will be regained when they are rinsed. You can put these morels in a bowl of salt water to clean. These morels are about 1 inch-4 inches tall, but on the smaller size at the beginning of the season, as the season progresses, they get bigger. There may be a few smaller ones in with your package. The morels will probably be very warm when you receive them, which is fine because they are very fresh. They are picked and shipped within 24 hours, so they are really fresh and can stand heat. -There are about 30- 35 morels per pound. -Refrigerate immediately upon arrival. You can put them in a bowl or strainer, something that will be sure to give them air circulation. They will continue to dry out, but again, when you put them in water, they regain their moisture. Use within 3- 5 days after arrival. Check them daily to make sure none of them have gone bad. If you find a bad mushroom, remove it immediately or it will ruin all of the morels around it. You will know because it will get soft. While we buy morels throughout the Midwest, we buy the bulk of our mushrooms in Minnesota and Wisconsin. We are headquartered in picturesque La Crescent, MN, right along the Mississippi River. Morel season in this area begins around April 30, depending on weather conditions.

Every spring avid morel hunters flock to fields and forests across the United States in searching for the delectable morel mushroom. They drive and hike for hours, wade through poison oak or ticks in search of the highly elusive morel. Why not grow morels in a backyard garden?

Believe it or not, you can find more than 2,000 kinds of wild mushrooms in the Mitten State, and morels are among the safest. Of course, morels require just the right mix of moisture and temperature to grow. But with the right conditions, the month of May is prime morel mushroom foraging season.


The best advice, though, is to look anywhere and everywhere. You may find morels at your favorite state park, along your fence, or around cleared logging areas. The more you look, the better your chances are of finding morels. Once you find a spot, keep it to yourself and check back every year.


These morels (Morchella spp.) are one of the most prized wild edibles. They produce large, pitted fruiting bodies with a unique texture and rich flavor. Unlike many cultivated mushrooms that have a robust meaty flavor, morels are best described as woody, nutty, and earthy.


The morel run lasts about two weeks. The resulting bounty tastes like nothing else, nutty and earthy and sweet. (The most common recipe: Sautee in butter. Eat. No overpowering seasonings or embellishments required.) Store-bought, wild-harvested morels fetch $35-$45 a pound.


A suspicious person might wonder if the foray was meant to distract the uninitiated from more productive sites. But then talk turned to previous successes at other locations, forays so successful that the morels were divvied up 10 at a time, seven times over.


"If you happened to luck on a good tree, like maybe an older tree that was at the right stage, you might find 20 to 50 morels around one tree," Spinosa said. "But otherwise, it it was just here and there occasionally."


North of St. Cloud, Kempenich said foragers are more likely to find black morels. They'll be most likely to grow amid 12- to 15-year old stands of aspen in low-lying areas. Stucki said aspen clear-cuts might also provide good black morel habitat.


The next day, while looking for something else entirely, I came upon a patch of morels encircling a dead tree. From a distance, they looked like squaw's root. Closer inspection revealed the two-toned appearance came from the pitted surface.


False morels, which can be poisonous, are not. They might have some hollow pockets, but they always have some material inside the stem or cap, sometimes a white, cotton-like substance. False morels also tend to have reddish hues and wavy caps.


Black morels typically appear first, followed by half-frees a week or two later, then yellows a a week or two after that. It can take up to 20 days for a morel to mature, stretching the season to up to six weeks, if conditions are ideal.


So how do morel hunters responsibly forage the mushroom? Some do use mesh bags. Others leave a few morels in each patch they find. Some wave around mature morels before they bag them to encourage spore dispersal.


Apostle Islands National Lakeshore: Collecting morels is permitted in some national parks, including the Apostle Islands, where gathering is limited to one gallon per person per week.


The mushrooms also are sold in abundance at the Muscoda Morel Mushroom Festival, held the weekend after Mother's Day in Muscoda, which claims to be the Morel Mushroom Capital of Wisconsin.
